The list of songs on screen when I open the ephpod program automatically
transfers to my Ipod, correct?

Because I keep syncing them up, but when I disconnect the Ipod and take it
on the road the total number of songs never changes.

The Ipod says "playing 1 of 137 songs."

Am I doing something wrong??

The list of songs on Screen when you open EphPod are the songs that are
already on the iPod.

It's difficult to know what's going wrong on (how many songs does EphPod
list here?), but I'd suspect that EphPod is not actually looking at your
iPod, but rather your hard drive. Go to configuration, and check which
Drive EphPod is thinking is the iPod Drive. Change that to the proper
one.
